
Coconut Ice

Servings: 50 Pieces
Ingredients
- 2 Lbs Sugar
- 10 oz Milk
- 10 oz Coconut Flakes unsweetened
- Vanilla Essence
- Red Colouring
Instructions
- Dissolve the sugar in the milk and bring to a boil.
- Boil to 240-245°F/115-120°C (approximately 10 minutes).
- Remove from the heat and add the coconut.
- Pour half of the mixture into an oiled pan, 9” x 6”.
- Colour the remaining mixture a light pink and pour onto the first half.
- When half set, mark with an oiled knife and break into pieces when cold.
