From the Archives
These notebooks document a formative period in Mark J. French's career, beginning with his earliest professional kitchen experiences in 1972 and continuing through 1984, when his work increasingly moved towards broader hospitality management.
Garde-manger at that time covered a wide range of preparations, from butchery and fishmongery through cold sauces, dressings, pâtés, terrines, galantines and mousses. Decorative buffet work was also an important part of the craft.
The collection preserves both the technical and creative sides of that work: recipes written for practical kitchen use, construction sketches, garnish ideas and photographs of finished presentations.
Look Inside
Selected pages show the combination of original working notes, handwritten recipes, presentation sketches and photographs contained throughout the collection.
About the Notebook
Garde-Manger Notes 1972–1984 preserves a collection of original culinary working notes created during a period when classical garde-manger remained an essential part of professional kitchen training and practice.
The pages record recipes and techniques that were used, adapted and refined in real kitchens rather than written retrospectively for publication.
Alongside terrines, pâtés and cold preparations are sketches showing construction, garnish and presentation ideas, together with photographs from the author's own archives.
Some methods reflect the traditions and presentation styles of their period. Their value today lies both in the practical techniques they preserve and in the insight they provide into professional garde-manger work during an earlier era of classical cookery.
