The History of St. Patrick’s Day
St. Patrick’s Day, celebrated annually on March 17, honours the patron saint of Ireland, St. Patrick. Born in Roman Britain in the 5th century, he was kidnapped as a teenager and brought to Ireland as a slave. He later escaped but returned as a missionary, credited with converting Ireland to Christianity. The day commemorates his death and has evolved into a worldwide celebration of Irish culture, featuring parades, festivals, and, of course, traditional Irish food and drink!
For a little fun, here is a limerick for the day……
There once was a chef named Gerry,
Whose cooking was bold and quite merry.
With a flick of his pan,
He’d wow every fan,
And his stew was as rich as a sherry! 🍀👨🍳

Beef Stew with Guinness

- 1 Pot with Lid
Ingredients
- 2½ lb Stewing Beef
- 2 each Onions, large 1/2 " dice
- 4 each Carrots 1/2" dice
- 2 Tbsp Butter
- 2 Tbsp Flour
- 1 Tbsp Tomato Paste
- ½ cup Guinness Drink the rest!
- ½ cup Beef broth
- 1 sprig Thyme
- 1 each Bay leaf
- Salt and pepper to taste
- 1 Tbspn Parsley chopped
Instructions
- In hot pan, quickly brown the beef in 1 Tbsp of the butter.
- Remove and saute the onions and carrots in the remaining butter until lightly browned.
- Put the beef back in the pan and sprinkle with the flour.
- Stir until everything is well coated and add the tomato paste, stirring for 1 minute.
- Gradually stir in the Guinness and beef broth until the mixture is smooth and bring to a simmer.
- Add the thyme and bay leaf.
- Cover with a lid and cook at a low heat (barely simmering) for 1½ - 2 hours adding more liquid from time to time if necessary.
- Season to taste with salt and pepper.
- Sprinkle with chopped parsley to complete presentation.

Traditional Irish Soda Bread

- 1 Mixing Bowl
- 1 Baking Tray
Ingredients
- 4 cups Plain Flour 500g
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 1 ¾ cups Buttermilk 400ml
Instructions
- Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
- In a large bowl, mix flour, baking soda, and salt.
- Make a well in the center and gradually add buttermilk, stirring until a dough forms.
- Lightly flour a surface and knead the dough gently for about a minute—don’t overwork it!
- Shape into a round loaf, place on the baking tray, and cut a deep cross on top.
- Bake for 30-35 minutes until golden brown and sounds hollow when tapped.
- Cool slightly before serving with butter, cheese, or jam.

Irish Coffee

- 1 Heatproof Glass
Ingredients
- 1 cup Freshly Brewed Hot Coffee
- 1 ½ oz Irish Whiskey 45ml
- 1 teaspoon Brown Sugar
- Freshly Whipped Cream
Instructions
- Fill a heatproof glass with hot water to warm it up, then discard the water.
- Pour in the hot coffee and stir in the brown sugar until dissolved.
- Add the Irish whiskey and mix gently.
- Carefully float the whipped cream on top by pouring it over the back of a spoon.
- Enjoy immediately by sipping through the cream—no stirring!
