
Gougères - (Cheese Puffs)
Light and airy savoury cheese puffs, a perfect accompaniment to drinks.

Ingredients
- 14 oz Water
- 6 oz Butter
- 6 oz Flour
- 3 each Eggs
- 4 oz Gruyere Cheese Parmesan or Cheddar can be substituted)
- 1 Pinch Salt
- 1 Pinch Paprika
Instructions
- Bring the water to a boil with the butter.
- Add the flour and stir until the mixture leaves the sides of the pan.
- Remove from the heat and cool slightly.
- Beat in the eggs, one by one, then add the cheese and seasonings.
- Pipe small mounds on a tray lined with parchment, and bake at 200°F / 392°C until golden brown.
