
Banana Bread

Ingredients
- 2 Cups All Purpose Flour (10 oz)
- 2 Tbspns Cinnamon
- 1 tspn Mixed Spice
- ¾ Cup Sugar (5 1/4 oz)
- ¾ tspn Baking Soda
- ½ tspn Salt
- ¾ Cup Walnuts chopped
- ¾ Cup Raisins
- 3 each Bananas (1½ Cups) mashed
- ¼ Cup Yoghurt
- 2 each Large Eggs
- 6 Tbspns Butter (1½ oz)
Instructions
- Mix the flour, spices, sugar, baking soda & salt well.
- Separately, mx the bananas, yoghurt, eggs, butter and vanilla.
- Combine the 2 mixtures just enough to bring together.
- Bake in 2 greased and floured 9”x3” tins and bake at 180C/350F for approximately 55 mins (or until an inserted skewer comes out clean).
- Leave in the tin 5 for minutes and then turn out on to a baking rack to cool.
Substitute all walnut with all raisins, or vise-versa if preferred. You can also divide the mixture into 2 before adding nuts and raisins and bake 2 different loaves to keep everyone happy!
