Banana Bread

Ingredients

  • 2 Cups All Purpose Flour (10 oz)
  • 2 Tbspns Cinnamon
  • 1 tspn Mixed Spice
  • ¾ Cup Sugar (5 1/4 oz)
  • ¾ tspn Baking Soda
  • ½ tspn Salt
  • ¾ Cup Walnuts chopped
  • ¾ Cup Raisins
  • 3 each Bananas (1½ Cups) mashed
  • ¼ Cup Yoghurt
  • 2 each Large Eggs
  • 6 Tbspns Butter (1½ oz)

Instructions

  • Mix the flour, spices, sugar, baking soda & salt well.
  • Separately, mx the bananas, yoghurt, eggs, butter and vanilla.
  • Combine the 2 mixtures just enough to bring together.
  • Bake in 2 greased and floured 9”x3” tins and bake at 180C/350F for approximately 55 mins (or until an inserted skewer comes out clean).
  • Leave in the tin 5 for minutes and then turn out on to a baking rack to cool.

Substitute all walnut with all raisins, or vise-versa if preferred. You can also divide the mixture into 2 before adding nuts and raisins and bake 2 different loaves to keep everyone happy!
