Equipment

  • 1 Pot with Lid
  • 1 Wooden Spoon
  • 1 Colander
  • 1 Ricer or Potato Masher
  • 1 Spatula
  • 1 Deep Fat Fryer

Ingredients

  • lb. Potatoes Peeled and cut in half. King Edward or Maris Piper are recommended. 680g.
  • 3 each Eggs (Yolks) The rest are beaten for egg wash.
  • 1 oz Butter 25g.
  • Salt & Pepper To taste
  • 1 Pinch Nutmeg
  • 2 ½ oz Flour 70g
  • 2 ½ oz Breadcrumbs 70g
  • 25 fl oz Vegetable Oil for frying. 750ml.

Instructions

  • Place the potatoes in a pan and cover with salted water.
  • Bring to a boil and cook until tender (approx. 20 minutes).
  • Drain immediately and add to the pan to evaporate any extra water.
  • Pass through a ricer or use a potato masher to make a smooth puree.
  • Season to taste with salt, pepper and nutmeg.
  • Allow to cool slightly and mix in the egg yolk.
  • Using a small scoop, place mounds of the mixture on to a lightly floured work surface.
  • Dust again with some flour and shape the croquettes by rolling lightly and tapping the ends with a spatula to form “cork” shapes.
  • Place on a tray and set aside in the refrigerator to firm up.
  • Dip each croquette into the flour, shaking off any excess, then the egg wash and finally the breadcrumbs to evenly coat, re-shaping as necessary by lightly rolling and using a spatula.
  • Chill the coated croquettes for 1 hour and then deep fry in the vegetable oil at 185˚C/365˚F until golden brown, approximately 3 minutes.
  • When cooked, drain on kitchen paper to remove any extra oil and serve.

Notes

The mixture can be piped out and cut into the required lengths for making larger amounts of croquette potatoes instead of using a scoop.
Ingredients such as crispy bacon bits, herbs, and cheese can be added to the mixture before breading to create more interest. The croquettes can be formed into cakes, and baked instead of deep-fried.
They freeze well and can be cooked straight from the freezer, ensuring extra time to heat through.
