Ingredients

Red Cabbage
finely shredded
1
each
Apple, Granny Smith or cooking variety
cut into small slices.

Tbsp.
Olive Oil.
1
Red Onion
finely sliced.
1
Clove
Garlic
finely sliced

Tbsp.
Brown Sugar
3
Tbsp.
Cider Vinegar
1

Bay Leaf
½
each
Cinnamon Stick
small

Cloves
whole
Salt and Pepper
to taste
Instructions
Heat a heavy pot and add the olive oil.
Add the onion and garlic.
Sauté until the onion is translucent and add the cabbage and apple.
Cook for 2 minutes and add the brown sugar.
Mix in and add the bay leaf, cinnamon and cloves.
Season with salt and pepper, cover and cook on a low temperature for 30 minutes.
Taste and adjust seasoning, adding more salt and pepper, brown sugar, or vinegar, as preferred.
