Mixture can be made and a few cookies scooped and baked when needed.
Instructions
Mix the sugar and oil in a bowl
Add the coca powder and mix well
Beat in the eggs and vanilla
Mix the flour, baking powder and salt, then gradually mix in to the cocoa mixture until well combined
Set in the refrigerator to firm up (approx. 4 hours or overnight)
Scoop 1” balls, then roll in the icing sugar to coat well
Place onto lightly greased baking tray, staggered to allow for slight spreading and cook at 350F (175C) for 12 minutes or until the cookies spring back when touched.
