Instructions
Heat 1 Tbspn of the oil in a frying pan and add the chicken wings.
Pan fry until golden brown, remove from the pan and drain, keeping warm.
In the same pan,add the remaining oil and then the ginger and garlic.
Saute briefly to draw out the aromatics and then the rice wine or sherry.
Add a drop of water to prevent the ginger and garlic from burning, followed by the ketchup, soy, oyster sauce, sweet and hot chili sauces.
Heat and adjust with a little water to give a coating consistency.
Add the chicken wings back to the pan to toss and heat through.
Adjust seasoning to taste with some salt or additional hot sauce.
Finish with the chopped coriander.
