Grilled Pineapple with Banana Rum Compote

Pineapple
Peeled, cored and cut into 8 slices

Peeled and sliced

Brown Sugar

teaspoon
Cinnamon
Powder

Dark Rum

Orange Juice

Toasted
Instructions
Grill the pineapple on both sides, turning to create a criss-cross marking..
Set aside and keep warm on serving plates.
Melt the butter in a hot saute pan and when sizzling add the bananas.
Toss quickly and sprinkle on the brown sugar and cinnamon.
When slightly caramelised, add the rum and flambe.Add the orange juice and heat enough to mix with the banana mixture.
Place a scoop of vanilla ice cream on top of each pineapple slice and spoon the banana compote over.
Garnish with a sprinkling of toasted coconut.
Notes
To allow you to spend more time with your guests, the pineapple and banana compote can both be prepared ahead of time.
