Instructions
Preheat the oven to 200°C (400°F).
In a bowl, mix the breadcrumbs, parsley, thyme, tarragon, garlic, lemon zest, olive oil, salt, and pepper.
Place the fish fillets on a lined baking tray and press the herb mixture onto the top of each fillet.
Bake for 12-15 minutes, or until the fish is opaque and the topping is golden.
Serve with lemon wedges and a side of seasonal vegetables.
