Instructions
Place the ribs in a pot and cover with cold water with a good sprinkling of salt.
Bring to a simmer, skimming off any particles that comes to the surface.
At this point aromatics such as bay leaf, peppercorns and other herbs may be added to the water.
Cook until tender. (1½ hours)
In the meantime, mix the remaining ingredients to make the marinade.
Drain the pork ribs, refresh and in the cooking pot, mix with the marinade.
In a hot wok, cook the ribs with the sauce until caramelized.
