Salt to taste
Instructions
Place the pork in a large pot with approx. 10 cups of water.
Bring to a simmer and skim off the scum that comes to the surface.
Add the garlic, ginger and peppercorns.
Cover and cook until the pork is tender, approx. 1 hour.
Add the fish sauce, onions, corn, potatoes and beans and cook for 10 minutes.
Add the bok choy and cabbage and cook for another 10 minutes.
Adjust seasoning with the salt, fish sauce and sinigang seasoning.
Notes
If sinigang seasoning or tamarind is unavailable, add some vinegar to add sourness.
