Place the flour, salt, pepper and nutmeg in the bowl of a stand mixer.
With the dough hook attached, add the eggs and then the milk.
Mix for approximately 15 minutes or until bubbles appear in the mixture.
Bring at least 2 quarts of lightly salted water to a boil, then reduce to a simmer.
Using a board, scrape the dough into the water to form small dumplings. A spätzle press, or even a colander with large holes to press the dough through can be used instead.
Cook the spätzle until they rise to the surface, about 2-3 mins.
Serve as they are or sauté in butter until browned and sprinkle with chopped parsley.
