Instructions
Cook the Pasta
Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Drain and reserve ½ cup of the pasta water.
Prepare the Sauce
Heat the olive oil in the pot over medium heat.
Sauté the garlic and chili until fragrant (about 1 minute).
Add the tomato paste and cook for another minute.
Pour in the white wine and let it reduce for 2 minutes.
Add the crushed tomatoes, oregano, salt, pepper, and sugar, then simmer for 10 minutes.
Cook the Seafood
Add the shrimp, clams and mussels, cover, and cook until they open (about 5 minutes). Discard any that remain closed.
Add the baby scallops and lobster meat, stirring gently to heat through.
Combine & Serve
Toss the cooked spaghetti with the sauce, adding the reserved pasta water as needed for consistency.
Stir in the butter, lemon, fresh parsley and basil.
Plate the pasta, topping with lobster claws for an elegant presentation.
Serve with lemon wedges and a drizzle of olive oil.
Enjoy with a glass of chilled white wine!
