Ingredients
For the Toad in the Hole
8Pork Sausagesgood-quality
2tbspBeef Dripping or Vegetable Oil

200mlMilk ¾ cup (or substitute ¼ cup of milk with cold water)
½tspSalt
For the Onion Gravy
1tbspButter
1tbspOlive Oil
2Onionslarge, thinly sliced
1tspSugar
1tspCider Vinegar
1tbspPlain Flour
500mlBeef Stock2 cups
1tsp.Worcestershire Sauce
Salt & Black Pepperto taste
Instructions
Make the Batter
In a mixing bowl, whisk together the flour and eggs.
Gradually add the milk, whisking until you have a smooth, lump-free batter.
Let the batter rest for at least 30 minutes (or overnight) to improve the texture.
Add the salt before using the batter.
Cook the Sausages:
Preheat your oven to 220°C / 425°F
Add the oil to a large baking dish and place it in the oven for 5 minutes until the oil is smoking hot.
Carefully add the sausages to the baking dish and roast for 10 minutes until they start to brown.
Cook the Toad in the Hole:
Remove the baking dish from the oven and immediately pour the batter over the sausages.
Quickly return it to the oven and bake for 25-30 minutes, until puffed up and golden brown. Do not open the oven door while cooking!
Make the Onion Gravy:
Heat the butter and oil in a frying pan over medium heat.
Add the sliced onions with the sugar and cook for 10-15 minutes, stirring often, until soft and caramelised.
Deglaze with the vinegar and cook for another minute.
Sprinkle in the flour and stir well, cooking for 1 minute.
Gradually add the stock, stirring constantly, and simmer for 5-10 minutes until thickened.
Season with the Worcesterhire sauce and salt & pepper to taste.
Serving Suggestion
Serve the Toad in the Hole hot with a generous drizzle of onion gravy. It pairs wonderfully with mashed potatoes and steamed greens like broccoli or peas.
Notes
Resting the batter overnight and adding the salt just before cooking, helps the batter to rise more.Additional flavourings can be added to the batter such as mustard powder, herbs or even some cheese, according to your taste. Mustard Powder (optional, for extra flavour)
