Ingredients
4eachFillets of Cod150g / 5 Oz Each
200g1 Cup All-Purpose Flour
1eachEgg
60g½ Cup Cornflour/Rice Flour
1TbspBaking Powder
300ml10 fl. oz Cold Beer
Salt & Pepper
4eachLarge Potatoescut into 1 cm (½”) chips (800g / 1 Lb 12 oz)
Vegetable Oil or Beef Dripping for Frying
Instructions
Peel and cut the potatoes.
If you have time, soak the chips in water overnight to remove excess starch.
Drain and dry in a kitchen towel.
To prepare the batter, mix the flours, egg, baking powder, salt, and beer until smooth.
Let it rest for 10 minutes.
Heat the oil to 160°C (320°F).
Fry the potatoes until soft, then remove and drain.
Increase the oil temperature to 190°C (375°F) and fry the chips again until crispy. Set aside.
Dredge the fish fillets in flour, dip in the batter, and fry at 190°C (375°F) for 5-6 minutes until golden brown.
Drain on paper towels and serve with the chips, malt vinegar and tartare sauce.
Notes
Beef dripping is the original fat used for deep frying and makes a noticeable difference in flavour.
The fish can be seasoned with salt and a little lemon for 15 minutes prior to cooking, to firm it up.
The batter can be seasoned with additions such as paprika or herbs for variety.
