Old Fashioned Salmon Loaf

Equipment

  • 1 Cutting Board & Knife
  • 1 Loaf Tin

Ingredients

  • 1 Tin Tin Salmon 14 ¾ oz
  • 3 each Eggs separated
  • ½ each Onion finely chopped
  • 2 Tbsp. Parsley chopped
  • 1 tsp. Lemon Juice
  • 1 tsp. Worcetershire Sauce
  • ¼ Cup Milk
  • 1 Cup Breadcrumbs
  • Salt & Pepper to taste
  • 1 dash Nutmeg
  • 1 Cup White or Bechamel sauce

Instructions

  • Put the salmon in a bowl and gently flake.
  • Lightly mix in the egg yolk, onion, parsley, lemon, Worcester, and then the milk and breadcrumbs. Gently combine until the mixture comes together.
  • Check the seasoning and lastly whisk and fold in the egg whites.
  • Spoon into a buttered loaf mould.
  • Bake at 180˚C/360˚F for 45 minutes, until golden brown on top.
  • Let the loaf sit for 5 minutes, then unmould, and serve sliced, accompanied by the sauce.

Notes

Use chopped herbs such as tarragon, dill, parsley, according to your preference in the sauce.
Other vegetables, such as corn can be used to add interest.
