Ingredients

  • 2 Cups Sugar
  • ¾ Cup Vegetable Oil
  • ¾ Cup Cocoa Powder
  • 4 each Eggs
  • 2 tspns Vanilla Extract
  • 2 ⅓ Cups All Purpose Flour
  • 2 tspns Baking Powder
  • ½ tspn Salt
  • Cup Icing Sugar

Mixture can be made and a few cookies scooped and baked when needed.

Instructions

  • Mix the sugar and oil in a bowl
  • Add the coca powder and mix well
  • Beat in the eggs and vanilla
  • Mix the flour, baking powder and salt, then gradually mix in to the cocoa mixture until well combined
  • Set in the refrigerator to firm up (approx. 4 hours or overnight)
  • Scoop 1” balls, then roll in the icing sugar to coat well
  • Place onto lightly greased baking tray, staggered to allow for slight spreading and cook at 350F (175C) for 12 minutes or until the cookies spring back when touched.
  • Remove from the tray and cool on a wire rack
