Ingredients

  • 4-5 each Potatoes , large peeled and cut into 3/4" cubes
  • 1 each Onion sliced or chopped
  • 3 cloves Garlic sliced
  • 12 moneach Curry Leaves
  • 1 stick Cinnamon small
  • ½ tspn Turmeric Powder
  • ½ tspn Fenugreek Seeds
  • 1 cup Skimmed Milk
  • 1 cup Coconut Milk
  • salt to taste
  • 1-2 tsp Lime Juice
  • 2 cups Water or as much as you need to boil the potatoes

Instructions

  • Boil the potatoes cubes until they become fork tender (about 20 minutes).
  • Place all the remaining except the coconut milk and lime juice in a large pan.
  • Bring to a boil and let the mixture cook for about 5 minutes.
  • Add the potatoes to the curry in the pot.
  • Add the coconut milk and bring to the boil.
  • Turn the heat off and add the lime juice.
