
Ingredients
- 4-5 each Potatoes , large peeled and cut into 3/4" cubes
- 1 each Onion sliced or chopped
- 3 cloves Garlic sliced
- 12 moneach Curry Leaves
- 1 stick Cinnamon small
- ½ tspn Turmeric Powder
- ½ tspn Fenugreek Seeds
- 1 cup Skimmed Milk
- 1 cup Coconut Milk
- salt to taste
- 1-2 tsp Lime Juice
- 2 cups Water or as much as you need to boil the potatoes
Instructions
- Boil the potatoes cubes until they become fork tender (about 20 minutes).
- Place all the remaining except the coconut milk and lime juice in a large pan.
- Bring to a boil and let the mixture cook for about 5 minutes.
- Add the potatoes to the curry in the pot.
- Add the coconut milk and bring to the boil.
- Turn the heat off and add the lime juice.
