Ingredients

  • 1 each Onion. small ¼” dice
  • 1 each Poblano Pepper ¼” dice
  • 2 cloves Garlic chopped
  • 1 ¾ cups White Rice
  • ½ tspn Salt
  • 20 cups Chicken Stock
  • ¼ each Romaine Lettuce chopped
  • 2 Tbspns Coriander, Fresh chopped
  • 2 Tbspns Parsley chopped

Instructions

  • Mix the rice with stock and rice, bring to a boil, cover and cook at 400 for 40 mins.
  • Saute the onion with the poblano for 4-5 mins.
  • Add the garlic and cook for another minute.
  • When the rice is cooked, mix in coriander and parsley until it turns green.
  • Add the onion mix then the romaine to complete.
