Green Rice
A unique rice dish with fragrant coriander and a touch of spice

Ingredients
- 1 each Onion. small ¼” dice
- 1 each Poblano Pepper ¼” dice
- 2 cloves Garlic chopped
- 1 ¾ cups White Rice
- ½ tspn Salt
- 20 cups Chicken Stock
- ¼ each Romaine Lettuce chopped
- 2 Tbspns Coriander, Fresh chopped
- 2 Tbspns Parsley chopped
Instructions
- Mix the rice with stock and rice, bring to a boil, cover and cook at 400 for 40 mins.
- Saute the onion with the poblano for 4-5 mins.
- Add the garlic and cook for another minute.
- When the rice is cooked, mix in coriander and parsley until it turns green.
- Add the onion mix then the romaine to complete.
