Equipment

  • 1 Cutting Board
  • 1 Cooks Knife
  • 1 Heavy Pot with a lid
  • 1 Wooden Spoon

Ingredients

  • 1 each Red Cabbage finely shredded
  • 1 each Apple, Granny Smith or cooking variety cut into small slices.
  • 2 Tbsp. Olive Oil.
  • 1 Red Onion finely sliced.
  • 1 Clove Garlic finely sliced
  • 2 Tbsp. Brown Sugar
  • 3 Tbsp. Cider Vinegar
  • 1 each Bay Leaf
  • ½ each Cinnamon Stick small
  • 3 each Cloves whole
  • Salt and Pepper to taste

Instructions

  • Heat a heavy pot and add the olive oil.
  • Add the onion and garlic.
  • Sauté until the onion is translucent and add the cabbage and apple.
  • Cook for 2 minutes and add the brown sugar.
  • Mix in and add the bay leaf, cinnamon and cloves.
  • Season with salt and pepper, cover and cook on a low temperature for 30 minutes.
  • Taste and adjust seasoning, adding more salt and pepper, brown sugar, or vinegar, as preferred.
