Summer Pudding

Equipment

  • 1 Cutting Board and Cooks Knife
  • 1 Set Round Cutters (or use a glass)
  • 1 Saucepan and Wooden Spoon
  • 1 Bowl

Ingredients

  • 8 slices White Bread crusts removed
  • 4 oz Strawberries quartered
  • 4 oz Raspberries
  • 4 oz Blueberries
  • 8 oz Water
  • 1 tsp Gelatine
  • 3 oz Sugar
  • ½ each Lemon juice only
  • 4 oz Raspberry sauce
  • 8 oz Custard sauce Crème Anglaise
  • Mint and Berries to garnish

Instructions

  • Cut 4 slices of bread lengthwise in half, then crosswise into four, making 8 small fingers per slice.
  • Line 4 small moulds (coffee cups work well) with the bread fingers.
  • From the remaining 4 slices, cut:
  • 4 small circles to fit the base of each mould
  • 4 larger circles to top each pudding
  • In a saucepan, soften the gelatine in the water. Add the berries, sugar, and lemon juice, then bring to a boil.
  • Remove from heat and allow to cool completely.
  • Spoon the cooled fruit mixture into the moulds.
  • Top each with the reserved large bread circle.
  • Cover with plastic wrap, place a plate on top of all moulds to compress slightly.
  • Refrigerate overnight to set.

Presentation

  • Run a small knife around the inside of each mould to release the puddings.
  • Invert onto cold dessert plates.
  • Brush with raspberry sauce and surround with the custard sauce.
  • Garnish with a few fresh berries and mint for added colour.
