
Ginger Garlic Chicken Wings

Ingredients
- 1½ lb Chicken Wings
- 2 Tbspns Vegetable Oil
- 1 " Piece Ginger finely chopped
- 6 Cloves Garlic finely chopped
- 1 Tbspn Rice Wine (or Sherry)
- 3 Tbspns Ketchup
- 2 Tbspns Soy Sauce
- 1 Tbspns Oyster Sauce
- 2 Tbspns Sweet Chili Sauce
- 1 tspn Hot Chili Sauce
- Water As needed
- 1 Tbspn Coriander chopped
Instructions
- Heat 1 Tbspn of the oil in a frying pan and add the chicken wings.
- Pan fry until golden brown, remove from the pan and drain, keeping warm.
- In the same pan,add the remaining oil and then the ginger and garlic.
- Saute briefly to draw out the aromatics and then the rice wine or sherry.
- Add a drop of water to prevent the ginger and garlic from burning, followed by the ketchup, soy, oyster sauce, sweet and hot chili sauces.
- Heat and adjust with a little water to give a coating consistency.
- Add the chicken wings back to the pan to toss and heat through.
- Adjust seasoning to taste with some salt or additional hot sauce.
- Finish with the chopped coriander.
