Ingredients
Lemongrass Gin Syrup
- 2 each Stalks Lemongrass Chopped
- 150 g Sugar ¾ Cup
- 150 ml Water ⅔ Cup
- 30 ml Gin 2 Tbsp
Lemongrass Gin Fizz
- 50 ml Gin
- 20 ml Lemongrass Gin Syrup
- 20 ml Fresh Lime Juice
- Soda Water To top up.
- 1 each Lemongrass Stalk & Lime Wheels To garnish
Instructions
To Make Gin Lemongrass Syrup
- Bruise and chop the lemongrass (smack with the back of a knife to release the oils).
- Combine the sugar and water in a small saucepan and bring to a simmer.
- Add the lemongrass and simmer gently for 10 minutes.
- Remove from heat, stir in the gin, and steep for another 10 minutes.
- Strain through a fine sieve or muslin. Cool completely.
- Store in a sealed jar or bottle in the fridge for up to 1 week.
To Make Lemongrass Gin Fizz
- Shakethe gin, syrup, and lime juice with ice.
- Strain into an ice-filled highball glass. Top with sparkling water.
- Garnish with a bruised lemongrass stalk or lime wheel.

- Replace gin with coconut rum for a more exotic profile. - Spiced Version
