Livy’s Key Lime Tart

A delicious, refreshing tart, one of the first items that my daughter, Olivia cooked.
In the Bahamas, we picked limes from a tree in the garden to use.

Ingredients

  • 4 oz Lime, Zest grated
  • ½ Cup Lime Juice 10 limes
  • 4 each Large Egg Yolks
  • 1 tin (14oz) Condensed Milk
  • ¾ Cup Heavy Cream
  • ¼ Cup Icing Sugar

For The Crust

  • 18 oz Graham Cracker Crumbs
  • 2 oz Sugar
  • 3 oz Butter melted
  • 1 ½ oz Egg Whites (from filling eggs).
  • 1 oz Water

Instructions

  • Whisk the lime zest and yolks together until green.
  • Beat in the condensed milk.
  • Beat in the lime juice and leave at room temp for 30 mins. to thicken.
  • Pour into a prepared tart shell and bake at 350°F for 15 to 17 mins. until set.

For The Crust

  • Mix all ingredients for the crust well until a dough is formed.
  • Roll and line a 10" tart tin with a removable bottom.
  • Chill before filling.
