Ingredients

  • 175 g Plain Flour 6 oz
  • 1 tsp Baking Powder
  • 1 tsp Ground Ginger
  • ½ tsp Ground Cinnamon
  • 125 g Unsalted Butter softened (4½ oz)
  • 125 g Dark Brown Sugar 4½ oz
  • 2 Large Eggs
  • 3 tbsp Golden Syrup
  • 2 tbsp Fresh Grated Ginger
  • 150 ml Whole Milk 5 fl oz

Toffee Sauce

  • 100 g Unsalted Butter 3½ oz
  • 150 g Light Brown Sugar 5 oz
  • 150 ml Double Cream 5 fl oz

Instructions

  • Preheat oven to 180 °C (350 °F). Butter a 20 cm (8 in) pudding bowl or baking dish.
  • Sift flour, baking powder, ginger, and cinnamon.
  • Cream butter and sugar until light. Beat in eggs one at a time, then golden syrup and grated ginger.
  • Fold in dry ingredients, alternating with milk. Pour into the bowl or dish and bake 35–40 minutes until risen and springy.
  • For sauce, melt butter and sugar in a pan, add cream, simmer 5 minutes until glossy.
  • Serve warm pudding with hot toffee sauce spooned generously over each slice.
  • For an extra treat, serve with clotted cream!
