Ingredients

  • 3 Lb Pork Ribs short cut
  • 2 Tbspns Salt to add to water for ribs
  • ¼ Cup Soy Sauce
  • 2 Tbspns Ketchup
  • 1 Tbspn Hoisin Sauce
  • 1 Tbspns Sweet Chili Sauce
  • 1 tspn Cider Vinegar
  • 1 tspn Sriracha Sauce
  • 1 tspn Sesame Oil
  • 1 tspn 5 Spice Powder
  • 2 Cloves Garlic finely chopped or grated
  • ½" piece Ginger finely chopped or grated

Instructions

  • Place the ribs in a pot and cover with cold water with a good sprinkling of salt.
  • Bring to a simmer, skimming off any particles that comes to the surface.
  • At this point aromatics such as bay leaf, peppercorns and other herbs may be added to the water.
  • Cook until tender. (1½ hours)
  • In the meantime, mix the remaining ingredients to make the marinade.
  • Drain the pork ribs, refresh and in the cooking pot, mix with the marinade.
  • In a hot wok, cook the ribs with the sauce until caramelized.
