Ingredients

  • 2 lbs Pork Neck Bone cut into servings
  • 8 Cloves Garlic crushed
  • 1 each Ginger, 1" piece sliced
  • ¼ tspn Black Peppercorns
  • 3 Tbspns Fish Sauce
  • 1 Packet Sinigang Seasoning or tamarind & vinegar
  • 1 each Onion quartered
  • 2 each Corn on the Cob cut into 8 pieces
  • 2 each Potatoes quartered
  • 20 pieces Green Beans 2½” pieces
  • 4 each Bundles Bok Choy
  • 10 Leaves Napa Cabbage sliced
  • Salt to taste

Instructions

  • Place the pork in a large pot with approx. 10 cups of water.
  • Bring to a simmer and skim off the scum that comes to the surface.
  • Add the garlic, ginger and peppercorns.
  • Cover and cook until the pork is tender, approx. 1 hour.
  • Add the fish sauce, onions, corn, potatoes and beans and cook for 10 minutes.
  • Add the bok choy and cabbage and cook for another 10 minutes.
  • Adjust seasoning with the salt, fish sauce and sinigang seasoning.

Notes

 If sinigang seasoning or tamarind is unavailable, add some vinegar to add sourness.
