
Rack of Lamb with Honeyed Mint Jus

Ingredients
- 4 each 3 Bone Racks of Lamb
- 1 cup Lamb Jus
- 1 bunch Mint, Fresh
- 2 oz Brown Sugar
- ÂĽ cup Cider Vinegar
- 1 Tbspn Honey
- ½ cup Olive Oil
- Salt and Pepper
Instructions
- Brush the lamb with a little olive oil and season with salt and pepper.
- Brown in a roasting pan and set in a hot oven to cook at 375. for approximately 20 minutes.
- While the lamb is cooking prepare the vinaigrette…..
- Pick the mint leaves from the stems and finely chop.
- Put in a bowl and add the brown sugar.
- With the back of a spoon extract the essential oils from the mix by rubbing the mint and brown sugar together.
- Add the cider vinegar and honey then whisk in the olive oil.
- Add the lamb jus, if using, and taste and season as needed.
- when the lamb is cooked to the required temperature, set aside to rest for 10 minutes.
- Serve the rack of lamb basted with the vinaigrette on a pool of the lamb jus garnished with vegetables of choice.
