
Livy’s Key Lime Tart
A delicious, refreshing tart, one of the first items that my daughter, Olivia cooked.In the Bahamas, we picked limes from a tree in the garden to use.

Ingredients
- 4 oz Lime, Zest grated
- ½ Cup Lime Juice 10 limes
- 4 each Large Egg Yolks
- 1 tin (14oz) Condensed Milk
- ¾ Cup Heavy Cream
- ¼ Cup Icing Sugar
For The Crust
- 18 oz Graham Cracker Crumbs
- 2 oz Sugar
- 3 oz Butter melted
- 1 ½ oz Egg Whites (from filling eggs).
- 1 oz Water
Instructions
- Whisk the lime zest and yolks together until green.
- Beat in the condensed milk.
- Beat in the lime juice and leave at room temp for 30 mins. to thicken.
- Pour into a prepared tart shell and bake at 350°F for 15 to 17 mins. until set.
For The Crust
- Mix all ingredients for the crust well until a dough is formed.
- Roll and line a 10" tart tin with a removable bottom.
- Chill before filling.
