Ingredients

  • 20 g Dried Thyme leaves only ¾ oz
  • 20 g Ground Sumac ¾ oz
  • 20 g Toasted Sesame Seeds lightly golden ¾ oz
  • 10 g Dried Oregano crumbled ⅓ oz
  • 5 g Dried Marjoram, optional crushed (scant ¼ oz)
  • 5 g Fine Sea Salt or to taste scant ¼ oz

Instructions

  • Lightly toast the sesame seeds in a dry pan over medium heat until golden and aromatic, then set aside to cool.
  • In a bowl, combine the dried thyme, sumac, oregano, marjoram, and sea salt. Add the cooled sesame seeds and mix thoroughly.
  • For a finer texture, pulse the blend briefly in a spice grinder or mortar and pestle, leaving some sesame seeds whole for texture.
  • Store in an airtight jar away from light and heat for up to three months.
  • Use as a dry rub for meats, mixed with olive oil as a dip, or sprinkled on hummus, labneh, or freshly baked breads.
