Ingredients
- 250 g Plain Flour 2 cups
- 1 tsp Baking Soda 1 tsp
- ½ tsp Fine Sea Salt ½ tsp
- 2 tsp Ground Ginger 2 tsp
- 1 tsp Ground Cinnamon 1 tsp
- ½ tsp Ground Cloves ½ tsp
- 1 tsp Ground Grains of Paradise 1 tsp
- 150 g Dark Brown Sugar ¾ cup
- 200 g Black Treacle or Molasses ⅔ cup
- 120 g Butter melted (½ cup)
- 2 each Large Eggs 2
- 240 ml Milk or Buttermilk 1 cup
Instructions
- Preheat the oven to 170°C / 340°F. Grease and line a 20–23cm (8–9 in) loaf tin.
- In a bowl, whisk together the Flour, Baking Soda, Salt, Ginger, Cinnamon, Cloves, and Grains of Paradise.
- In a separate bowl, combine the Brown Sugar, Treacle, and Melted Butter.
- Whisk in the Eggs one at a time until smooth.
- Stir in the Milk or Buttermilk.
- Fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Pour the batter into the prepared tin and smooth the top.
- Bake for 40–50 minutes, or until a skewer inserted into the centre comes out clean.
- Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.
Notes
Grains of paradise add a bright, peppery lift that balances the sweetness of treacle and the warmth of ginger. For a more pronounced citrus-spice note, add ½ tsp finely grated orange zest to the batter.
Serving Suggestions
- Warm with salted butter or clotted cream
- Served with poached pears
- Cut into cubes and used in festive trifles
- Toasted lightly and paired with honey or marmalade
