Yoghurt With Nigella & Olive Oil

Equipment

  • 1 Small Serving Dish
  • 1 Small Frying Pan to toast Nigella Seeds

Ingredients

  • 400 g Thick Natural Yoghurt 1¾ cups
  • 1 tsp Nigella Seeds 4 g
  • 2 Tbsp Extra Virgin Olive Oil 30 ml
  • ½ tsp Fine Sea Salt 3 g
  • 1 Tbsp Fresh Herbs finely chopped, optional (such as mint, parsley or dill)

Instructions

  • Place the Thick Natural Yoghurt in a serving bowl and smooth the surface with the back of a spoon.
  • Heat a small dry pan over low heat.
  • Add the Nigella Seeds and toast gently for 30–60 seconds until aromatic. Do not allow them to burn.
  • Sprinkle the toasted Nigella Seeds over the yoghurt.
  • Drizzle with the Extra Virgin Olive Oil and season lightly with Fine Sea Salt.
  • Scatter the Fresh Herbs over the top if using.

To Serve

  • Serve immediately with warm flatbreads, grilled meats, roasted vegetables or as part of a mezze selection.

Notes

For a more luxurious texture, strain the yoghurt overnight in muslin or a coffee filter to create a thicker, labneh-style base. This also intensifies the contrast between the creamy yoghurt and the aromatic nigella seeds.
