Equipment

Ingredients

  • 1 Lb Butter softened
  • 1 Tbsp. Horseradish pureed
  • ½ Tsp. Marjoram, dried
  • ½ Tsp. Basil, dried
  • ½ Tsp. Thyme, dried
  • ½ Tsp. Tarragon
  • ¼ Cup Parsley finely chopped
  • 1 each Garlic Cloves finely chopped
  • 1 each Shallot finely chopped
  • 1 Tsp. Salt
  • ½ Tsp. Dry Mustard Powder
  • ½ Tsp. Black Pepper
  • 2 Tsp. Lime or Lemon Juice
  • 2 Tsp. Worcestershire Sauce
  • 3 Tbsp. Soy Sauce
  • 1 Pinch Cayenne Pepper
  • ½ Tbsp. Paprika

Instructions

  • Place the butter in a mixing bowl and incorporated the remaining ingredients, mixing until well incorporated.
  • Form into 1” rolls in plastic or parchment paper, and then wrap in aluminium foil and twist the ends to form uniform cylinders.
  • Place in the refrigerator to set.
  • Slice as needed and place on cooked barbecue and grill items to season.
  • Rolls may be kept in the freezer for longer term storage.

Notes

You will find this butter very useful to have on hand for all kinds of dishes.
Use: Excellent melted over steaks, seafood, poultry, or vegetables.
Variation: Add a little chopped chili or jerk spice for extra island heat.
Storage: Keeps 1 week refrigerated or 3 months frozen.
