
Spaetzle - German Egg Noodles

- 1 Mixing Bowl
- 1 Wooden Spoon
- 1 Large Pot
- 1 Board to scrape, spätzle press or colander
- 1 Frying Pan
Ingredients
- 4 Cups All-Purpose Flour
- ½ teaspoon Salt
- ¼ teaspoon Nutmeg freshly grated
- ¼ teaspoon Pepper
- 4 each Eggs, large
- 1¼ Cups Milk
- 4 oz Butter
- 1 Small Bunch Parsley roughly chopped
Instructions
- Place the flour, salt, pepper and nutmeg in the bowl of a stand mixer.
- With the dough hook attached, add the eggs and then the milk.
- Mix for approximately 15 minutes or until bubbles appear in the mixture.
- Bring at least 2 quarts of lightly salted water to a boil, then reduce to a simmer.
- Using a board, scrape the dough into the water to form small dumplings. A spätzle press, or even a colander with large holes to press the dough through can be used instead.
- Cook the spätzle until they rise to the surface, about 2-3 mins.
- Serve as they are or sauté in butter until browned and sprinkle with chopped parsley.
