Equipment

  • 1 Mixing Bowl
  • 1 Wooden Spoon
  • 1 Large Pot
  • 1 Board to scrape, spätzle press or colander
  • 1 Frying Pan

Ingredients

  • 4 Cups All-Purpose Flour
  • ½ teaspoon Salt
  • ¼ teaspoon Nutmeg freshly grated
  • ¼ teaspoon Pepper
  • 4 each Eggs, large
  • Cups Milk
  • 4 oz Butter
  • 1 Small Bunch Parsley roughly chopped

Instructions

  • Place the flour, salt, pepper and nutmeg in the bowl of a stand mixer.
  • With the dough hook attached, add the eggs and then the milk.
  • Mix for approximately 15 minutes or until bubbles appear in the mixture.
  • Bring at least 2 quarts of lightly salted water to a boil, then reduce to a simmer.
  • Using a board, scrape the dough into the water to form small dumplings. A spätzle press, or even a colander with large holes to press the dough through can be used instead.
  • Cook the spätzle until they rise to the surface, about 2-3 mins.
  • Serve as they are or sauté in butter until browned and sprinkle with chopped parsley.
