Ingredients

  • 250 g Plain Flour 2 cups
  • 1 tsp Baking Soda 1 tsp
  • ½ tsp Fine Sea Salt ½ tsp
  • 2 tsp Ground Ginger 2 tsp
  • 1 tsp Ground Cinnamon 1 tsp
  • ½ tsp Ground Cloves ½ tsp
  • 1 tsp Ground Grains of Paradise 1 tsp
  • 150 g Dark Brown Sugar ¾ cup
  • 200 g Black Treacle or Molasses ⅔ cup
  • 120 g Butter melted (½ cup)
  • 2 each Large Eggs 2
  • 240 ml Milk or Buttermilk 1 cup

Instructions

  • Preheat the oven to 170°C / 340°F. Grease and line a 20–23cm (8–9 in) loaf tin.
  • In a bowl, whisk together the Flour, Baking Soda, Salt, Ginger, Cinnamon, Cloves, and Grains of Paradise.
  • In a separate bowl, combine the Brown Sugar, Treacle, and Melted Butter.
  • Whisk in the Eggs one at a time until smooth.
  • Stir in the Milk or Buttermilk.
  • Fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  • Pour the batter into the prepared tin and smooth the top.
  • Bake for 40–50 minutes, or until a skewer inserted into the centre comes out clean.
  • Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.

Notes

Grains of paradise add a bright, peppery lift that balances the sweetness of treacle and the warmth of ginger. For a more pronounced citrus-spice note, add ½ tsp finely grated orange zest to the batter.
Serving Suggestions
  • Warm with salted butter or clotted cream
  • Served with poached pears
  • Cut into cubes and used in festive trifles
  • Toasted lightly and paired with honey or marmalade
Storage
Keeps 4–5 days wrapped at room temperature. Flavour improves after 24 hours. Freezes well for up to 2 months.
