Ingredients

  • 400 g Spaghetti
  • 1 each Lobster pre-cooked, meat removed, and claws kept for garnish (optional)
  • 8 pieces Large Shrimp
  • 200 g Baby Clams cleaned
  • 200 g Mussels cleaned
  • 200 g Baby Scallops
  • 4 tbsp Olive Oil
  • 4 each Garlic Cloves finely sliced
  • 1 each Red Chili finely chopped (adjust to taste)
  • 400 g Tinned Tomatoes crushed (preferably San Marzano)
  • 100 ml Dry White Wine
  • 1 tsp Tomato Paste
  • 1 tsp Sugar optional, to balance acidity
  • Salt and Black Pepper to taste
  • 1 tsp Dried Oregano
  • 1 Handful Fresh Parsley chopped
  • 1 Handful Fresh Basil leaves torn
  • 25 g Butter
  • ½ each Lemon for juice
  • 1 each Lemon Wedges for serving

Instructions

Cook the Pasta

  • Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Drain and reserve ½ cup of the pasta water.

Prepare the Sauce

  • Heat the olive oil in the pot over medium heat.
  • Sauté the garlic and chili until fragrant (about 1 minute).
  • Add the tomato paste and cook for another minute.
  • Pour in the white wine and let it reduce for 2 minutes.
  • Add the crushed tomatoes, oregano, salt, pepper, and sugar, then simmer for 10 minutes.

Cook the Seafood

  • Add the shrimp, clams and mussels, cover, and cook until they open (about 5 minutes). Discard any that remain closed.
  • Add the baby scallops and lobster meat, stirring gently to heat through.

Combine & Serve

  • Toss the cooked spaghetti with the sauce, adding the reserved pasta water as needed for consistency.
  • Stir in the butter, lemon, fresh parsley and basil.
  • Plate the pasta, topping with lobster claws for an elegant presentation.
  • Serve with lemon wedges and a drizzle of olive oil.
  • Enjoy with a glass of chilled white wine!
