Ingredients
- 400 g Spaghetti
- 1 each Lobster pre-cooked, meat removed, and claws kept for garnish (optional)
- 8 pieces Large Shrimp
- 200 g Baby Clams cleaned
- 200 g Mussels cleaned
- 200 g Baby Scallops
- 4 tbsp Olive Oil
- 4 each Garlic Cloves finely sliced
- 1 each Red Chili finely chopped (adjust to taste)
- 400 g Tinned Tomatoes crushed (preferably San Marzano)
- 100 ml Dry White Wine
- 1 tsp Tomato Paste
- 1 tsp Sugar optional, to balance acidity
- Salt and Black Pepper to taste
- 1 tsp Dried Oregano
- 1 Handful Fresh Parsley chopped
- 1 Handful Fresh Basil leaves torn
- 25 g Butter
- ½ each Lemon for juice
- 1 each Lemon Wedges for serving
Instructions
Cook the Pasta
- Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Drain and reserve ½ cup of the pasta water.
Prepare the Sauce
- Heat the olive oil in the pot over medium heat.
- Sauté the garlic and chili until fragrant (about 1 minute).
- Add the tomato paste and cook for another minute.
- Pour in the white wine and let it reduce for 2 minutes.
- Add the crushed tomatoes, oregano, salt, pepper, and sugar, then simmer for 10 minutes.
Cook the Seafood
- Add the shrimp, clams and mussels, cover, and cook until they open (about 5 minutes). Discard any that remain closed.
- Add the baby scallops and lobster meat, stirring gently to heat through.
Combine & Serve
- Toss the cooked spaghetti with the sauce, adding the reserved pasta water as needed for consistency.
- Stir in the butter, lemon, fresh parsley and basil.
- Plate the pasta, topping with lobster claws for an elegant presentation.
- Serve with lemon wedges and a drizzle of olive oil.
- Enjoy with a glass of chilled white wine!
