
Monkfish Stroganoff

Ingredients
- 400 g Monkfish Tail cut into strips 14 oz
- 60 g Paprika Sweet Hungarian (¼ cup)
- 40 g Unsalted Butter softened 1½ oz
- 60 g Shallots finely chopped 2 oz
- 40 g Garlic cloves, finely chopped 1½ oz
- 250 ml Dry White Wine crisp 8½ fl oz
- 120 ml Cider Vinegar mild 4 fl oz
- 300 ml Cream 10 fl oz
- 300 ml Demi-Glace (optional to add body) 10 fl oz
- 200 ml Chicken Stock full-flavoured 7 fl oz
- 300 g Button Mushrooms thinly sliced 10 oz
- 70 g Gherkins or Dill Pickles julienned 2 oz
- 15 g Chives finely chopped ½ oz
- 120 ml Sour Cream thick and chilled 4 fl oz
Instructions
- Season the monkfish strips, dust with the paprika, and pan fry in a little olive oil until just cooked through then remove and set aside.
- Melt the butter in the pan over medium heat then add the chopped shallots and garlic. Cook until translucent without colouring.
- Deglaze the pan with the white wine and cider vinegar then reduce the liquid by two-thirds until syrupy.
- Add the cream, demi-glace, if using, and chicken stock then bring the mixture to a gentle boil.
- Reduce to a simmer, add the mushrooms, and cook for 5 minutes to reduce.
- Season to taste and check for consistency adjusting with cornflour if required.
- To finish, add the monkfish, gherkins, and half of the sour cream. Adjust seasoning if necessary.
Presentation
- Serve in warm shallow bowls with a generous spoonful of remaining sour cream and a scattering of chopped chives or parsley.
- Ideal with rice, or buttered noodles and a green vegetable, such as French beans.
