
Sumac-Tossed Fatoush Salad

Ingredients
- 200 g Cherry Tomatoes halved 1½ cups
- 1 each Medium Cucumber diced 1 medium
- 5 each Radishes thinly sliced 5 small
- 100 g Romaine Lettuce chopped 2 cups loosely packed
- 20 g Flat-Leaf Parsley finely chopped ¼ cup
- 10 g Fresh Mint finely chopped 2 tbsp
- ½ each Small Red Onion thinly sliced ½ small
- 2 Pieces Pita Bread torn into bite-sized pieces (2 rounds)
- 60 ml Olive Oil extra virgin 4 tbsp
- 2 tsp Ground Sumac 2 tsp
- 30 ml Lemon Juice, freshly squeezed 2 tbsp
- 1 each Garlic Clove crushed 1 large
- Salt to taste to taste
- Black Pepper freshly ground to taste
Instructions
- Tear the pita into small pieces and drizzle lightly with a little olive oil.
- Toast on a baking sheet in a preheated oven at 180°C (350°F) or pan-fry until golden and crisp.
- Set aside to cool. In a small bowl whisk together the lemon juice, crushed garlic, sumac, salt, and pepper.
- Slowly add the olive oil while whisking to form a smooth dressing.
- In a large mixing bowl combine the cherry tomatoes, cucumber, radishes, romaine lettuce, red onion, chopped parsley, and mint.
- Add most of the toasted pita and drizzle over the dressing.
- Gently toss until all ingredients are evenly coated. Taste and adjust seasoning if needed.
Presentation
- Transfer to a shallow serving dish and scatter the remaining toasted pita on top. Finish with a final sprinkle of sumac.
- Serve immediately for crunch or let stand for five minutes to allow the flavours to mingle.
