Ingredients
For the Chicken
- 4 each Chicken Breasts skin-on
- 1 tbsp Fenugreek Seeds 15 ml
- 1 tbsp Olive Oil 15 ml
- 20 g Unsalted Butter ¾ oz
- Salt & White Pepper to taste
For the Spiced Maple Butter Glaze
- 40 g Unsalted Butter 1½ oz
- 2 tbsp Maple Syrup 30 ml
- ½ tsp Ground Fenugreek 2.5 ml
- ½ tsp Ground Coriander 2.5 ml
- ½ tsp Smoked Paprika 2.5 ml
- ½ each Lemon, juice
- 1 Pinch Sea Salt
For Garnish
- 1 Small Bunch Fresh Chervil or Micro Herbs
- ½ each Lemon Zest (from above)
Instructions
Toast the Fenugreek Seeds
- Place the fenugreek seeds in a dry pan over low heat and toast for 1–2 minutes until fragrant and golden. Crush lightly in a mortar and pestle.
Prepare the Chicken
- Pat the chicken breasts dry and season lightly with salt and white pepper.
- Heat the olive oil and butter in a sauté pan over medium heat. Add the chicken, skin-side down, and sear until golden (about 5–6 minutes). Turn and cook for a further 5–6 minutes or until the juices run clear.
Make the Spiced Maple Butter
- In a small saucepan, melt the butter and stir in maple syrup, ground fenugreek, coriander, smoked paprika, and lemon juice. Simmer gently for 1–2 minutes until smooth and aromatic.
Glaze and Finish
- Spoon the spiced maple butter over the seared chicken. Reduce the heat and baste continuously for 2–3 minutes until glossy and well-coated.
Rest and Serve
- Allow the chicken to rest for a few minutes before serving. Spoon a little extra glaze over the top.
Presentation
- Serve each chicken breast on a warm plate or shallow bowl, with a drizzle of the glaze and a garnish of fresh chervil or micro herbs.
- For a refined touch, accompany with roasted carrots or autumn root vegetables brushed lightly with the same spiced butter.
